Job Description Wine Waiting. Wine Waiting Staff have normally acquired their wine knowledge training or working in a hotel or restaurant. This can be done by tasting the individual Wines on the Wine List. Some establishments have extensive Wine Lists and the Wine Waiter, Wine Waitress may not have had chance to taste them all. It is important that the Wine Waiter, Wine Waitress knows the various vintages and common characteristics of different type’s of wine
The Wine Waiter, Wine Waitresses should be familiar with the establishments different menu’s and know what wines would be appropriate with each dish and be able to suggest wine’s appropriate for each dish to the customer.
The Wine Waiters, Wine Waitresses should respect the customers Wine selection and never question it even though the Wine Waiter / Waitress knows that the Wine selected may not be compatible with the dish.
A Wine Waiter, Wine Waitresses should be able to serve Wine in the correct way. Knowing that pouring a little in the glass is to allow the Wine to breathe and presenting the customer with the cork is to authenticate that the Wine label is the same as the imprint on the cork and not for the customer to smell. They should also be familiar with different Wine Glasses. They should also know how to open bottles of Champagne.
Wine Waiter’s, Wine Waitresses are normally responsible to “The Sommelier” and should work with other Waiting on Staff such as Plate and Silver Service Waiting on Staff, they should know the correct time to serve Wine.
